Lentil, Prawn, Chevre Salad with Lemon Garlic Dressing

This is a really yummy salad that a friend gave to me which I have adapted slightly. It has been Dave proofed and is therefore delicious because I heard him say yeah this is delicious. I guessed at the qty’s when I made it but it still turned out great. Here goes:

Recipe for 2

Ingredients:

10 to 12 medium sized uncooked prawns

2.5 cups cooked green lentils

3 large man hands of baby spinach

1/4 cup sliced kalamata olives

1/4 cup chevre

Cook the prawns in olive oil until done (Don’t overcook, 5 to 7 minutes on medium heat.)

Microwave the spinach for 1 minute in the microwave.

Assembly:

Place the spinach in a medium sized bowl that isn’t too deep.

Place strained lentils and prawns on top of the spinach.

Spread Kalamata olives evenly over top of the salad.

Disperse small pieces of chevre evenly over top of the salad.

Dress with Lemon Honey salad dressing.

Recipe for Lemon Honey salad dressing.

1/4 cup olive oil

juice of one lemon

1 tsp of honey or to taste

3 cloves garlic (ok I like garlic)

1 heaping tsp of dijon

Mix it all together and add salt and pepper to taste.

Now get to it. This is delicious!
